As some of you know, I am a self proclaimed foodie. I enjoy dining out, but I also find solace in the kitchen preparing meals for my family and friends. During these winter months I find comfort in serving hearty meals from time to time. Because I have a busy schedule I utilize my time wisely, as far as cooking goes as well. The Crock Pot, also known as a slow cooker, is a gal’s pal! When I combined my Caribbean tastebuds with my multi tasking ways, I came up with this easy way to make oxtails while I can knock off a few tasks on my to do list- even while I’m at work! I’m going to share a foolproof recipe for oxtails that I’ve made up through trial and not so much error- only because I know which flavors compliment one another.
Angel’s Semi Homemade Caribbean Oxtails
2 pounds oxtails cut into ½-1” pieces
14 oz jar of tomato base sofrito
1 pack of onion soup mix
4-5 sprigs of fresh thyme
1 can butter beans, drained and rinsed
Heat crock pot on high for 15 minutes before adding oxtails. Sprinkle soup mix over meat. Add thyme, arranging between pieces of oxtails. Pour in sofrito. Top with beans.
cook on high for 6 hours or low for 8. Serve over rice, mashed potatoes or quinoa. A good hearty meal to sit and eat together.
